Simple. Healthy. Tasty. 5 minute Spring salad

The one problem with trying to be healthy, is that everyone assumes it involves copious amounts of salad and nothing else. A girl can't survive on salad alone. But this quick and tasty salad might make me want to give it a try. Its delicious. Its also a good idea with Spring here, and Summer soon...

Ingredients for dressing:
3 tablespoons olive oil
1 tablespoon balsamic vinegar or fresh lemon juice
1 garlic clove finely chopped
crushed sea salt and black pepper to taste
Optional: 1 teaspoon whole grain mustard

Salad:
Greens: Whatever is seasonal. Rocket, lettuce, watercress, spinach
1/4 chopped onion, red onion gives it some nice colour
1/4 cucumber cut lengthways and sliced
1 chopped tomato or a handful cherry tomato
handful of depipped olives
Optional: Half a round of feta
Also optional: a tin of tuna for some protein

Put all the dressing ingredients directly into the salad bowl. Swirl the bowl for about 30 seconds so the oil and vinegar mix. The put the greens in, and the rest of your salad ingredients on top. Toss and eat.

I have Lupus SLE and I recently started the Vii.V program. I would like to know what foods I should avoid permanently. I am at a loss as to spices and sauces I can and can't use. I am not an avid cook and recently I was given a cook book which is considered "healthy eating" however the recipes include margarine and sauces that one would buy at the local grocery store. These items contain preservatives and all those other things that I was told are bad for me. I was told to avoid white flour, all sugars, tin foods and frozen vegetables. This makes it really difficult to prepare meals. Fresh fruit and vegetables are not always accessible to me Is there somewhere I can access a cook book for South Africans that is Lupus friendly?

Hi

I have been following this program for almost a year now, and am a passionate cook and yes, for fun I bake. I have had a tremendous amount of fun recreating my old favourite recipes into this program, and it would be nice to have a space to post recipes on this site. I am sure some of the other 'converts' would love to try their hand at reinventing and posting their favourite food's too!
